1С-Rarus system helps Ladurée preserve the French quality of desserts

1C-Rarus company automated two Moscow-located luxury bakery boutiques of the famous French house Ladurée. The information space, created using the solutions of 1C-Rarus: Restaurant management and RestArt, encompasses workplaces for the cashiers, waiters, administrators, stockmen and accountants. The new system helps keep track of the inventory, so that all of the 15 macaron kinds, delivered directly from France, were always in stock. High European standards of the customer service are carefully observed: the guests can fully enjoy fresh French desserts, while the top management controls and analyses all work aspects online.

Ladurée boutiques are the first confectioneries of the famous French house in Moscow. It’s a real paradise for those with a sweet tooth: 15 types of the macarons, delivered directly from France, the most delicious chocolate, jam, tea and other delicacies.

The history of Ladurée began in 1862, when a writer, Louis Ernest Ladurée, a man from France’s southwest, created a bakery in Paris. After a few years, the place transformed into a tea room, where ladies could enjoy the company of their friends. In 1930, the heir, Pierre Desfontaines, created a dessert that made the bakery famous. He was the one who first thought of taking two meringue-based shells and joining them with a delicious ganache filling. The dessert has been the bakery’s signature ever since.

The first Ladurée branches opened up in France in 1997. Today, there are over 50 boutiques all across the world, and recently they opened their doors in the heart of Moscow, Russia, on the Malaya Bronnaya st first, followed by the location in GUM.

Given the business specifics of the boutiques, the 1C-Rarus specialists created a new system based on two industry solutions: 1C-Rarus: Restaurant Management and RestArt.

The main results of the project are:

  • The inventory processes have been automated. Using the system, you can accurately track the date of the dessert delivery from Paris, control the delivery, watch for expiration dates, carry out timely write-offs. This ensures that customers can have fresh favorite desserts any day.
  • The created system is indispensable for preparing its own dishes at the confectionary: it allows the workers to calculate the number of ingredients needed for each dessert and to control clear step-by-step cooking according to the recipes. Correct plans for the purchase of products are drawn up, without additional unscheduled orders and a pause of sales, which saves resources.
  • The system records all customer orders, and the information instantly goes to the kitchen staff. This allows the workers to focus on the service and direct communication with each guest to guarantee high-quality service.
  • The loyalty management subsystem helped organize gift card sales and the opportunity for customers to pay with such cards. This increases the traffic of loyal customers who, as a pleasant gift, can present each other with the experience of visiting the pastry boutique or celebrate a significant event there.
  • The boutique management actively uses the capabilities of the system for reporting. The system automatically generates over 20 types of reports. The preparation of each of them requires no more than 1 minute. They allow the management to analyze data on revenue, popular forms of payment, daily number of desserts sold, and help monitor the work of staff and personal sales of each employee. Having at hand accurate information on the taste preferences of guests, the management of the boutique offers the most popular, finest, and delicious dishes and desserts.

Thanks to the new system, we control on a daily basis the number of products left in stock, and quickly organize the next delivery, so that the customers can be certain that their favorite desserts are always available. The system also guarantees that all the financial data for the internal reports are up to date".

The Ladurée confectionery is the first boutique of the famous French house, opened in Moscow. The history of Ladurée began in 1862, when a writer, Louis Ernest Ladurée, a man from France’s southwest, created a bakery in Paris. Nine years later, a fire broke out in the bakery, which became the major push to the complete transformation of the place. The artist Jules Cheret painted heaven and angels on the ceiling, and Ladure’s wife, Jeanne Souchard, proposed the idea of ​​turning the pastry shop into a tea room where women could gather there with their friends in complete freedom because back in those days the ladies were forbidden to appear in cafes without men.

In 1930, the Ladure’s heir, Pierre Desfontaines, invented a dessert that brought fame to the confectionery. This dessert was the macaron in their modern form — two meringue-based halves, crispy on the outside and soft on the inside, joined with ganache filling.

First Ladurée boutiques opened on the Champs-Elysées and in the Le Printemps Haussmann store in 1997. The international expansion began with the opening of the first boutique in the London-based store, Harrods, in 2005. Today, the luxury bakery and sweets maker house Ladurée has over 50 boutiques all over the world.
